Grilled Double Cheese Burger on a Pretzel Bun

For me, the difference between a good burger and a great burger is the meat! If the meat is not properly seasoned what is the point? I also made the patties thinner for less cooking time making them more tender.
Patty mise en place:
1 pound ground beef 80/20 (80% beef/20% fat)
1 tablespoon Worcestershire sauce
2 teaspoons dried mustard
2 teaspoons salt
1 tablespoon ground black pepper
Burger Build mise en place:
4 pretzel buns, sliced and brushed with oil
1 red onion, peeled and sliced into 1/4" slices and brushed with oil
4 leaves of green lettuce, washed and dried
Mustard - (my go to is Alstertor Dusseldorf Style Mustard. It comes in a glass mug and is available at most markets or on Amazon)
8 pieces of Velveeta slices... or american cheese
Method:
-mix all the burger ingredients by hand until well Incorporated throughout the meat. measure the meat out into 1/3 cups each. place each measure amount of meat between parchment paper and evenly smash down (at this point, you can place the portions into a freezer bag and freeze for later use)
-remove from parchment paper and lay on a tray. sprinkle with salt and set aside
-on a preheated grill (if you don't have one... use a skillet or griddle) place onions, close grill lid and let steam for 5-7 minuted. You want the onion to be cooked through with a bite, not mushy and NOT burned.
-flip onions and repeat cooking process for an additional 5-7 minutes. remove and place to the side
-place burger patties on the grill and gently push down to keep them from shrinking and not hard enough to push through the grill! cook for 3-5 minutes. flip and repeat the process
-once the burger is flipped onto its second cooking side, its time to toast the pretzel buns on the inside. do not put the buns over a flame, they should be toasted not burnt!
-remove all ingredients from the grill and place on a sheet tray. add the cheese to each burger
-time to build!! from bottom to top: bottom bun. mustard. cheese. burger. cheese. lettuce. onion. mustard. top bun.
-make it your own creation by adding other ingredients such as pickles, sauerkraut, BBQ sauce, fried egg.. endless possibility!
