This super simple is bright in flavor and color! You will love how affordable and easy it is to make!
Ingredients:
1 bundle asparagus - sliced
3 lemons - juiced
1 rotisserie chicken
1# mini penne
1/2 bag spinach
1 bunch fresh basil - picked
Red pepper flakes to taste
butter
Method:
-Cook pasta in salted water to al dente - mild bite
-In a large saute pan (i don't have one large enough so I use my stock pot) cook down asparagus first (2-4 min) then add in the spinach and salt.
-Once the spinach is cooked down, add in the shredded chicken and season again
-Add the cooked pasta and lemon juice into the cooked veg/chicken mix
-continue cooking until the lemon juice is nearly gone. Add in a few knobs of butter and mix
-turn heat off and add in basil
-taste. salt. taste
Serve hot! Jason likes to add shredded Parmesan cheese on top! YUM!
