Roasted Pork Loin with Herb Cream Sauce




Serves 2-4


1 pork loin

1 cup heavy whipping cream

½ cup dry white wine

1 Tablespoon grain mustard

Parsley

Basil

Tarragon


Method:

Preheat the oven to 350 degrees fahrenheit. Line the baking sheet with foil and spray a wire rack with cooking oil. Pat pork loin dry and season with oil, salt and pepper. Place prepared pork loin on a wire rack and roast until internal temperature reaches 165 degrees fahrenheit, about 30-40 minutes


While loin in cooking, heat a heavy bottom saute pan, reduce heavy whipping cream and white wine until thick. Remove from heat, whisk in grain mustard and herbs. Taste. Season. Taste.


Remove pork loin and let rest for 5-7 minutes. Slice pork loin about ½ in thick. Serve with a healthy portion of sauce on top.
