Shaved Brussels Sprout Salad



Shaved Brussels Sprouts Salad

4 servings


8 cups brussels sprouts

2 slices thick cut bacon


1/4 cup champagne vinegar

3/4 cup extra virgin olive oil

1/4 teaspoon honey

1/2 teaspoon Korean pepper flakes (or pepper flakes)

salt and pepper to taste


method:

preheat oven to 350 degrees. place bacon on a sheet tray and bake for 20 minutes, flipping over half way through. remove and let cool.


using a mandolin, slicer on a food processor or a sharp knife, shred the sprouts and place in a mixing bowl. slice the bacon and add to the sprouts.


for the dressing, whisk champagne vinegar, honey and pepper flakes. slowly whisk in the extra virgin olive oil. taste, season with salt and pepper and taste again.


toss the sprouts in the a little bit of the dressing. add in more dressing until its all covered but NOT soaked! enjoy!
