Spicy Cashew Dressing

Spicy Cashew Dressing

Yield 1 qt


2 cups roasted cashews

4 cloves garlic

2 inch piece fresh ginger

1 chili pepper (optional)

2 Tablespoon honey

1/4 cup sesame oil

1/4 cup rice wine vinegar

1-1/2 cup water


Place everything EXCEPT water into a blender or food processor and blend until smooth. Turn down on low and slowly add in water until all combined. Tasted. Season. Taste.

Serve as a dip or dressing. Store in airtight container in the refrigerator up to 2 weeks.
