Steamed Salmon


I've heard from so many people that salmon can be intimidating to cook. This is an easy, fool proof way to steam your salmon and give you confidence to make it over and over!


Steamed Salmon

makes 2 servings


Ingredients:

1 pound salmon, cut in half

1 each small yellow squash

1 each small zucchini

1 lemon, sliced

1 ounce fresh dill

salt and pepper to taste

2 sheets parchment paper


Method:

  • preheat oven to 350 degrees

  • slice yellow squash, zucchini and lemon

  • layer yellow squash and zucchini in the middle of 1 sheet of parchment paper. Season with salt and pepper.

  • lay the salmon on top of the vegetables and season with salt and pepper.

  • lay the fresh dill on top of the salmon

  • place 4 slices on top of the salmon and fresh dill

  • Place second sheet of parchment paper on top

  • starting with a corner, roll both sheets of parchment paper inward and rotate right, rolling inward as you turn.

  • Repeat this process until all sides have been rolled up.

  • Place on sheet tray

  • bake in preheated oven for 30-35 minutes

  • Remove and let set for 3-5 minutes.

  • CAREFULLY cut the top open. Steam will release from the opening like a microwave popcorn bag... USE CAUTION.

  • You can eat directly from the parchment paper or remove and eat.

  • Enjoy!
