Mashed Potato Omelet


This is one of those ideas that I wish I would have thought of earlier! Its decadent, cost efficient, filling and absolutely delicious!


Mashed Potato Omelet


Ingredients

3 eggs, large

2/3 cup instant mashed potatoes

2/3 cups water, boiling

1/4 cup gruyere, finely shredded cheese (or your favorite cheese)

2 Tablespoon neutral oil (grapeseed)

1 teaspoon butter

1 teaspoon dill, fresh

Salt and Pepper to taste


Method:

Mix the instant mashed potatoes and boiling water until they are creamy smooth. Add in cheese, salt and pepper, cover and set aside.

Preheat nonstick skillet on low, heating throughout. This will keep the eggs from scorching. Whisk eggs with a pinch of salt and pepper until the whites are completely incorporated. Pour into hot pan. Using a rubber spatula, gently scrape the sides and bottom of the pan scrambling the eggs. Gently flatten the eggs on the bottom of the pan. Add 1/4 of the mashed potatoes down the middle of the of the pan. Flip both sides of the eggs over the mashed potatoes. Turn out onto a plate. Place the butter on top of the omelet letting it melt. Sprinkle with fresh dill and salt.

Enjoy while hot.
